a single-varietal Chardonnay grown responsibly in chalk and clay soil. The domain is dedicated to respecting its soils, letting grass grow in the vineyard to encourage competition and microbial life. Herbicides are banned, the vines are intentionally aerated, and green harvests take place. Thoroughly sorted, the grapes are vinified with the idea of letting the fruit tell the story of its terroir. Thus, the domain intervenes very little. To avoid marking the wine with oaky notes, it is matured in large containers, and the frequent stirring typical of the region’s methods is not practiced here. Maturation takes between 12 and 18 months.
We recommend leaving this wine for at least two years in the cellar, ideally savouring it within ten years. It will reveal its pale, golden hue as well as pure aromas of white fruit, white flowers, almond, butter, and a hint of minerality. This minerality also comes through in the texture, balanced nicely with the cuvée’s richness. We recommend pairing this wine with a delicate dish like fish or poultry.
